Vanilla cream with Blackberries

Ingredients :

6 egg yolks
2 whole eggs
1 litre of milk
200gr sugar
1 vanilla bean
fresh blackberries

Preheat your oven at 180°C.

Start by heating up the milk, sugar and vanilla bean.
While you wait for it to boil, whisk together the yolks and eggs. Then, gently add a couple of ladles of hot milk, before you pour all the eggs into the milk, whisking all along.

Pour the mixture into oven proof ramequins, on a tray full of water, to create an oven bain marie.
Bake for 1 hour, then let cool at room temperature and finally over night in the fridge.
Before serving, decorate with fresh blackberries.
