Recipe : Lamb Rogan Josh

Ingredients :

1 cinnamon stick
6 cardamom pods
4 cloves
3 tbsp ghee
1 onion
2 cloves of garlic
1tbsp grated ginger
5tbsp puréed tomatoes
salt
750gr lamb, cubes
350ml stock
2 bay leaves
2tsp paprika
chili powder to taste
1 tsp turmeric powder
2 tsp ground coriander
1 tsp ground cumin
1/4 tsp nutmed
1 tsp garam masala
100ml plain yoghurt

  1. Melt the ghee and grop in the cinnamon stick, cardamom pods and cloves to toast for 30sec. Then add in the onion and mix until it becomes translucent. Add in the garlic and ginger, then the powder spices. Toast for another 1min.
  2. Add in the tomato purée and chicken or vegetable stock, as well as the salt.
  3. Add the lamb cubes, mix well and let simmer on low to medium heat for 2 hours.
  4. When the meat is tender, add in the yoghurt, mix well and cook for another 5min, then turn off the heat.

    You can serve it over some basmati rice, and top with some chopped coriander (I personally am not a big fan, so I skip it).

I highly recommend you prepare all the ingredients beforehand, as there is nothing worse than burned spices to spoil your cooking pleasure.
