Ingredients :
1 onion
3 tomatoes
1 red pepper
1 jalapeno (or to taste)
2 carrots
2 cloves of garlic
1 filet of cod (around 800gr)
1 tsp ground cumin
1 tsp smoked paprika
250ml coconut milk
350ml chicken or fish stock
juice of 1 lime
- Start by softening the onion and garlic in some olive oil. If you have red palm oil it’s even better.
- Add in the chopped carrots and pepper, spices, salt, then cover with the chicken stock and leave to cook on medium heat, lid on, for 20min.
- Add in the chopped tomatoes and coconut milk, then let it simmer for another 15min.
- When all your vegetables are cooked and the sauce is nice as thick, add in the fish, cut in large cubes so they keep their shape. Let it cook for 5min then turn off the heat and let it rest with the lid on for 20min.
Serve over some lime coconut rice.
