Tuna Tataki with the perfect sauce

Ingredients :

1 thick tuna steak
1/2 tsp grated ginger
1tbsp soy sauce
1tsp ponzu sauce
1tbsp mirin
3tbsp orange juice
1tsp roasted sesame oil

Mix everything except for the tuna in a small jar and set aside for 20 minutes at least, so the flavours can infuse and blend.

Cut your tuna steak into long strips of about 3cm/1.5inch wide. Heat your non-stick pan on high, then with a drop of olive oil grill your tuna strips for 20-30 second on each side, then set aside.

Cut thin slices of about 0.5cm and arrange on your plate, then right before serving drizzle some sauce on top. You could also serve the sauce on the side if you do not have the guarantee it will be eaten right away. The longer the sauce sits on the fish, the longer it will cook it, and you loose the freshness of the semi-cooked tataki.
